Bean curd sheet ginkgo nuts sweet soup

A cooling summer snack or dessert bean curd sheet ginkgo nuts sweet soup aka longevity soup 豆腐皮白果糖水 aka 腐竹白果糖水. Why is it called longevity soup, the ginkgo tree symbolizes as longevity. The soup is good for your skin and health. It cools down you body during the summer and enhance your immune system. Although it is advised not eat more than 3 ginkgo nuts at once as it could be poisonous as you eat more.

Bean curd sheet aka tofu skin is made of soy milk. Fresh soy milk is made, after Boiling for some time a film is forming on top of the soy milk. The tofu skin will be dried for further use.


  • 2 bean curd sheets or sticks
  • 1 egg
  • 1,5 liter water
  • 40 g sugar or rock sugar
Bean curd sweet soup with gingko nuts

Cut the bean curd sheets into pieces, so it fits in the pan with water and heat it up. Boil the bean curd sheets for 5 minutes and add the ginkgo nuts and boil it for another 10 minutes. Add the 40 grams of sugar. If you are a sweet tooth add more sugar to your liking. Boil for another 5-10 minutes. Beat the egg and add 2 tbsp of water and mix well. The soup is ready when the bean curd sheets are soft and silky. Finally, add the beaten egg and stir gently through the soup. The soup is ready.
