A simple, but fragrant dish is fried tofu with salted egg sauce 咸蛋豆腐. You can serve it with noodles or rice or eat it as a snack.
Ingredients
- 3 salted chicken egg yolk
- 1 tofu brick about 200 gr.
- 1 stalk scallions
- 1 tsp pepper
- 1/2 tbsp sugar
- 1 tsp salt
- 3 tbsp water
- 1 tbsp vegetable oil
Cut the tofu in bite size cubes and fried till golden brown. Take the 3 salted egg yolk and mash it with a fork. Add the water and mix it well till a paste. Set aside for later use. Take a little bowl and add the salt, sugar and pepper. Cut the scallions finely.
Heat the pan and add the oil. After, add the salted egg paste and stir-fry till the water has been evaporated. The egg yolk mixture will look like foam. This will take about 2 minutes. Take the little bowl and add the dry ingredients. Stir fry for about 1 minutes. Finally, add the fried tofu and scallions and mix well till the sauce has covered all the tofu.
