Steamed egg with minced pork belly, dried shrimps and egg tofu

Steamed egg with minced pork belly and dried shrimp is a real Cantonese comfort food. Steamed egg is often made for kids served with rice. A childhood memory dish. It is nutritious and easy to make. Every Chinese family has its own version. You can put into the steamed egg mixture all kinds of ingredients. My version has egg tofu. Egg Tofu is a mixture of soy milk and eggs, and steamed.

Ingredients

Minced meat

  • 150 gr pork belly
  • 2 tbsp dried shrimp
  • 2 tsp chicken stock powder
  • 1 tsp corn starch
  • 1/2 tbsp sesame oil
  • 2 tsp light soy sauce
  • 1 tsp pepper
  • 2 tbsp water

Egg mixture

  • 3 eggs
  • 1 cup of water
  • 1 tsp pepper
  • 1 tbsp light soy sauce
  • 1 tsp chicken stock powder
  • 1/2 tbsp sesame oil
  • 1 stick egg tofu, optional
  • 1 scallion

First, soak the dried shrimp in a cup with lukewarm water. Use a cleaver to mince the pork belly and marinate it with chicken stock powder, corn starch, sesame oil, light soy sauce, pepper and 2 tbsp water. Let it marinate for few minutes. In the meantime, chop the scallion finely and cut the egg tofu into 2 cm thickness. Beat the eggs and add the cup water which you have soaked the dried shrimp. Finally, add the light soy sauce, pepper, chicken stock powder and sesame oil and mix well.

Take a bowl for steaming, add the marinated minced pork belly and add on top of it the soaked dried shrimps, scallions and the egg mixture, mix it well. Finally, add the egg tofu. Steam the meat egg mixture for about 20-25 minutes at high heat. It depends on the height of the bowl how long you need to steam the egg dish. Use a chopstick to check whether the eggs are cooked at the center of the bowl.
