All day breakfast, one of my favorite Taiwanese breakfast rice roll aka fan tuan 饭团. Although, I mostly make it for diner instead of breakfast. It is easy to make and there are no rules how to make a fan tuan. As filling, you can use all kinds of ingredients. Of course, the base for the rice roll is glutinous rice. To make the rice roll extra special you can use black glutinous rice, this with give the rice a purple color. Fan tuan looks like an up-side down sushi roll.
I could eat rice rolls the whole day, as the filling is sweet and hearty, but also it has different texture, crunchy, chewy and a heat of spicy ingredients.
My version of a fan tuan
Ingredients
- Glutinous rice (I used a mixture of black glutinous rice, white glutinous rice and pandan rice)
- Dough stick aka youtiao
- pickled radish
- 2 eggs
- 3 scallions
- Spicy shrimp floss (or meat floss)
- Romaine lettuce
- Nori sheets
- Seaweed paste
- sesame oil
- 1/2 tsp sugar
Tools
- Sushi bamboo sheet
- Cling foil
Prepare the rice.
Soak the pickled radish in some lukewarm water for 5 minutes. After, chop the pickled radish finely and stir-fried the chopped pickled radish with some sesame oil and little sugar in a pan until it is dry and fragrant. This will take about 5 minutes.
Chop the scallions finely and mix it with 2 eggs and make an omelet. Cut the omelet into strips. Wash the Romaine lettuce.
Assembly of the rice roll. Take the bamboo sheet and add on top a piece of cling foil. First, add a layer of rice. Spread the seaweed paste on top of it and sprinkle some spicy shrimp floss. Accordingly, add the pickled radish. Finally, add a piece if nori sheet, Romaine lettuce, dough stick and a few omelet strips. Like rolling a sushi roll, roll the fan tuan tightly.
Alternative fillings, salted duck egg, all kinds of pickled vegetables, spicy beef or a fried egg, fried unions, crab stick, kimchi, sesame seeds etc.
