A refreshing semi cold noodle a real comfort food for the summer. Noodles with Mongolian style stir fried lamb. I have used the knife cut noodles as it is chewy and can absorb a lot of sauce, Mongolian style stir fried lamb leg meat and fresh crunchy cucumber cut into sticks. It is quick and easy to make.
Ingredients for 3 portions
- 4 bunches knife cut noodles or other noodles
- 1 cucumber
- 300 gr lamb leg meat
- 1 union
- 1 gloves of garlic
- 2 tbs hoisin sauce
- 2 tbs light soy sauce
- 1 tbs dark soy sauce
- 2 tsp five spice powder
- 1/2 tsp sesame oil
- 1 tsp pepper
- 1/2 cup cilantro
- sesame seeds for garnish
- 1 tsp salt
- 2 tbsp vegetable oil
- chili oil, optional

Prepared some Mongolian style stir fried lamb leg meat and cucumber cut into sticks. It is quick and easy to make.
Take the lamb leg meat and cut into thin slices. Marinate the lamb meat with the garlic, hoisin sauce, soy sauces, five spice powder, sesame oil and pepper. Let it marinate for 15 minutes or longer.
Cut the cucumber in half and take the seeds out with a spoon. Cut the cucumber into sticks and add the salt. Marinate it for 15 minutes in the fridge. The salt will take the water out of the cucumber and it will become crunchier. Rinse the cucumber with some water and drain it well.
Chop the onion in strips and chop finely the cilantro. Cook the noodles according the instruction on the package al dente and set aside.
Put the vegetable oil in a pan and stir fry the lamb meat 2 minutes at high heat. Add the union, stir fry till the meat is cooked in about 3-4 minutes. If you want more sauce you can add some water. Finally, add the cilantro and turn of the heat.
Assembly of the noodles dish. First, add some noodles in a bowl, then the cucumber and finally the Mongolian style stir fried lamb leg. Carefully mix it all together. For some heat, add some chili oil. Finally, use the sesame seeds as garnish.
For the spicy version you can add 1 tsp chili bean sauce into the marinade.
