Stir-fried shrimp with salted egg sauce

Stir-fried shrimp with salted egg sauce is a smokey, savory and sweet dish. Mostly, salted duck egg is used as it is more creamy than the chicken egg. Unfortunately, duck eggs are hard to find and more expensive. Salted egg yolk is a versatile ingredient. You can use it for savory, sweet dishes, cookies, chips and pastries.  

I made another batch of salted chicken egg that I marinate in a brine of water, sea salt and star anise for 5 weeks. The egg yolk turns out beautifully dark orange and solid. The best way to use the egg yolk is to steam the egg yolk for 10 minutes and let it cool down for further use.

The egg white is very salty, but you can use it for egg drop soup, in congee or for steamed egg dishes. Besides shrimp, you can stir-fry the salted egg sauce with fried pumpkin, crab meat or noodles.

Stir-fried shrimp salted egg sauce


  • 3 salted egg yolk (chicken or duck)
  • 12 shrimps
  • 1 tbsp salted egg white
  • 1 tbsp corn starch
  • 1 tbsp sugar
  • 1/2 tbsp pepper
  • 1/2 tbsp chicken stock powder
  • 1 glove garlic
  • 3 tbsp vegetable oil
  • 2 tbsp scallions
  • 2 tbsp cilantro
  • 3 tbsp water

First, steam the egg yolks for 10 minutes and let it cool down. Wash the shrimp, peel of the skin and cut open the back to clean the gut. Marinate the shrimp with the egg white and corn starch for 5 minutes. If you do not have salted egg white, you can use chicken egg white instead. Cut the garlic, scallions and cilantro finely.

Take the steamed egg yolks and mash it finely with a folk. Add the water and mix well till you have a yellow smooth paste. Put the chicken stock powder, sugar and pepper in a little bowl and mix it well.

Heat the pan with vegetable oil and fry the shrimp till golden brown, this will take 3-4 minutes. Take out the fried shrimp and set aside for later use.

Reduce the oil in the pan till you have only 2 tbsp oil left. Add accordingly the garlic. Stir-fry the garlic for 30 seconds till it is fragrant. Pour in the egg yolk paste and stir-fry till fragrant. This will take about 3 minutes. Add the chicken stock powder, sugar and pepper, and stir-fry another minute. Add the fried shrimps and stir-fry it shortly, till the sauce has covered all the shrimps. Finally, add the scallions and the cilantro and turn off the heat.

You can serve it with rice or egg noodles.
