Steamed pork ribs with plum sauce

It is plum season. I love to make plum sauce as it is much healthier to make you own sauce or jam. Green plums like the Reine-Claude is perfect to use as it is sweet and sour. Plum sauce goes well with steamed pork ribs or braised Duck. For the plum sauce I used sugar and gelatin powder. Ratio plum and sugar depends on your liking. I have used 500 grams of plums and about 100 grams of sugar and 1 tbsp gelatin powder. I prefer a sourer jam for cooking. If you want to use the jam as well for your bread, I suggest using more sugar. Do not forget to take the out skin of the plum sauce as it will make the sauce bitter and sourer.

Ingredients

  • 500 gr pork ribs, cut into squares
  • 1 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tbsp sugar
  • 1/2 five spice powder
  • 1 tbsp corn starch
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tsp sesame oil
  • 3 tbsp plum sauce or as alternative 2 pickled plum with some juice
  • 1 stalk scallions
  • 1 slice of ginger

Marinate the pork ribs with all the ingredients for at least 1 hour, the longer the better it will taste. After, steam it for about 25 minutes. Serve it with some rice and vegetables. If the sauce turns out to be too sour, you can add extra sugar. If the sauce turns out too sweet add some more plum sauce at the end and steam for another 5 minutes.
