Lamb’s lettuce egg drop chicken soup

Making soup does not mean that you need hours of preparation. Especially, when you in a hurry and still wants some delicious and healthy soup. Chinese cuisine there are two types of soups. The light variations which is mostly a vegetable soup. The soup is boiled for only a few minutes. The heavy soups which is mostly a herbal soup. It is a heavy broth made with meat bones, all kinds of herbal ingredients, roots, beans, corn, carrots etc. The herbal soup needs to be boiled for at least 2-3 hours.

Lamb's lettuce egg drop chicken soup

Lamb’s lettuce egg drop soup is easy to make and nutritious.


  • 1 liter water
  • 100 gr chicken filet
  • 1 tbsp chicken stock powder
  • 250 gr lamb’s lettuce
  • 1 tbsp goji berries
  • 1 thick slice of ginger
  • 2 tsp sesame oil
  • 2 tbsp light soy sauce
  • salt and pepper
  • 1 egg
  • 2 tbsp water

Cut the chicken filet in small pieces and marinate it with 1 tsp sesame oil, 1 tbsp light soy sauce, salt and pepper. Soak the goji berries for a few minutes in lukewarm water. Heat the pan with water and add the chicken stock powder and ginger and let it simmer 5 minutes. After, add the chicken filet and goji berries and simmer for another 5 minutes till the chicken has been cooked. Beat the egg and add 2 tbsp water and mix well. Now add the lamb’s lettuce to the soup and simmer for 2 minutes. Finally, add the beaten egg to the soup. Turn off the heat and season the soup further with some sesame oil, salt and pepper to your liking.

If you cannot find lamb’s lettuce you can replace this with spinach, snow pea sprouts or romaine lettuce.
