Preserved vegetables with beef 榨菜牛肉

An old school ingredient Sichuan preserved vegetables in can exist for many years. It is flavorful, salty and spicy. It can be used in sweet sour soup, stir-fries or steamed with beef. It is quick to make and very tasty comfort food. It is made of mustard vegetables and pickled with salt, dried chili flakes and Sichuan peppercorns.

Preserved vegetables with beef


  • 300 g lean beef
  • 1-2 pcs preserved vegetables
  • 1 tbs light soy sauce
  • 2 tbs oyster sauce
  • 1 tsp sugar
  • 2 tsp sesame oil
  • 1 tsp pepper
  • 2 tbsp cornstarch
  • 2 tbsp water

Slice the beef and the preserved vegetables in same size. The preserved vegetable are quite salty, you can soak them in some water for 15 minutes, but them the preserved vegetables will be less spicy. Put the beef, the preserved vegetables in a bowl and add all the ingredients. Let it marinate for 15 minutes. The longer the better. Steam the beef for about 8-9 minutes, longer if you like to have the beef steamed well done. Serve it hot with some rice. If you have some leftovers, the next day you can make fried rice, really comfort food.
